3 cups mashed potatoes ( leftover or instant )
12 corn tortillas
Parmesan cheese (grated)
Hot sauce (Louisiana style)
Oil for frying
Smear 3 tbs. of potato on one half of a corn tortilla, place the tortilla with potato in 3/4 of an inch of hot oil. Fold tortilla over to make a taco. Fry until crispy. Remove from oil. Add desired amount of Parmesan (approx. 1/2 TBS ) lettuce, tomato, and hot sauce.
