Jerry's Kids bakeoff winner

COLUMBUS, GA (WTVM) - Congratulations to Brittani Elias of Columbus, who submitted the winning recipe in the "Bake-Off for Jerry's Kids" at the Columbus Government Center.

Brittani's Strawberry Shortcake beat several other desserts and a number of main dishes in the competition.

Corporal Janet Day, with the Muscogee County Sheriff's Office, organized the bake-off as a fundraiser for the Muscular Dystrophy Association. Here is Brittini's delicious recipe:

Strawberry Shortcake    

 Ingredients: Pound cake, strawberries (fresh or frozen), whipped topping and strawberry glaze.    

Recipe for Pound cake:
1 ½ cup of butter
1 - 8oz. package of cream cheese
3 cups of sugar
1 tbsp of vanilla extract
6 large eggs
3 cups of flour
¼ tsp of salt

Cream together butter and cream cheese in a large mixing bowl, gradually adding sugar. Blend until mixture is light and fluffy and sugar is no longer granulated. 

Add vanilla, scraping sides of bowl until extract is thoroughly incorporated. Alternate adding eggs with remaining dry ingredients, starting and ending with flour, beating well after each addition.

Pour batter into well-greased and floured 10-inch Bundt or tube pan. Bake 1hr 15mins or until inserted toothpick comes out clean. Cool in pan for 5 mins. Place cake on wire rack and let cool completely.

Ingredients for glaze:

1 - 12oz. tub of whipped topping
1 - 16oz. package of strawberry glaze
1 ½ cups of sugar

Mix strawberries, glaze and sugar with electric mixer for 2mins until a spreadable consistency(If too thick add more sugar).  After cake has cooled, cut and crumble into desired dish. Take big serving spoon and drizzle glaze mix over crumbled cake. Cover completely. Take another spoon and cover with whipped topping. Repeat with layers: cake, glaze mix and whipped topping.

Optional: Add fresh strawberries on top
