Tailgating on the cheap recipes

Hummus
Servings - 10
2  cup(s) garbanzo beans, drained, liquid reserved
1 1/2  teaspoon(s) kosher salt
4  medium garlic, cloves, minced
1/3  cup(s) sesame paste, Tahini
6  tablespoon(s) lemon juice, 2 lemons
2  tablespoon(s) water, OR juice from garbanzo beans
8  dash(es) Tabasco pepper sauce

Directions: Place all ingredients, except for endive in food processor and process until hummus is coarsely pureed. Then taste for seasoning.
Note:  I use Texas Pete because it's not quite as hot as Tabasco and doesn't over power the hummus. Hummus is great with sesame crackers/carrots, celery sticks, etc.

Reheating Instructions: Serve at room temp or chilled

Caponata
Servings 4            
1/4  cup(s) olive oil
1  large celery stalk, chopped
1  medium eggplant, peeled cut into 1/2 inch cubes
1  medium onion, chopped
1  medium red bell pepper, cored, seeded and chopped into 1/2 inch pieces
14  ounce(s) tomatoes, petite diced with juice
3  tablespoon(s) raisins
1/2  teaspoon(s) oregano
1/4  cup(s) red wine vinegar
4  teaspoon(s) sugar
1  tablespoon(s) capers
salt and pepper
basil, fresh

Directions:
1. In large heavy skillet heat oil over med heat
2. Add celery and saute till tender crisp, add eggplant and saute till soft
3. Add onions and saute till translucent
4. Add bell pepper and saute 5 min
5. Add diced tomatoes with juice, raisins and oregano
6. Simmer for 20 min
7. Stir in vinegar, sugar, capers and salt and pepper
8. Garnish with basil

Reheating Instructions:  Thaw 24 hours. Heat in 350 oven till warm throughout or in microwave at 70%.

Blue Cheese Coins
Servings - 25          
1/2 pound(s) Blue cheese, stilton is good!
1/2 pound(s) butter, unsalted, 2 sticks at room temp
1/2  teaspoon(s) sea salt
1  tablespoon(s) cayenne
2  cup(s) flour, all purpose
1  cup(s) walnuts, finely chopped OR pecans

Directions: 
1.  Preheat oven to 350 degrees.
2.  Sift dry ingredients.
3. Mix cream butter and cheese with mixer.
4. Add dry ingredients and mix to combine.         
5. Fold in nut and roll into log inside plastic wrap.
6. Refrigerate or bake immediately
7.  To bake, slice thinly and bake for 12-15 min until golden brown.

Note: Store in tins

Yields about 50 servings or 25 servings (2 each)

Mexican Layered Dip
Servings - 10     
2  10 3/4 oz. can(s) refried beans
2  teaspoon(s) Tabasco pepper sauce, TEXAS PETE
1  teaspoon(s) lemon
2  large avocados
16  ounce(s) sour cream
3  ounce(s) taco seasoning mix
1  medium green onion, chopped
3--3 oz. black olives, sliced
2  medium tomatoes, medium dice
16  ounce(s) Cheddar cheese, GRATED or Monterey Jack

Directions:
1. Mash avocado and mix with lemon juice and Sand P
2. Layer ingredients in order listed and keep covered until serving time

Keep refrigerated until serving time
