Mediterranean Veggie Wrap-SaddleBrooke Ranch

Mediterranean Veggie Wrap with Olive Feta Dressing

  • 2oz. fresh spinach
  • 4 slices cucumber (thin slices)
  • 3 tomato slices
  • 3 red onion rings
  • 2oz. roasted portabella mushroom (julienne)
  • 2 oz. red and green bell pepper (thin julienne)
  • 1oz. kalamata olives (sliced)
  • 2 oz feta cheese (crumbled)
  • 1 tomato basil wrap



Olive Feta Dressing



  • ¼  C rice wine vinegar
  • ½  tsp. kosher salt
  • ½ tsp. white pepper
  • ¼ tsp dry mustard
  • 1 tsp. fresh chopped garlic
  • 2 T. sugar
  • ¼ C. kalamata olives


Place dressing ingredients in a blender and process for 10 seconds. 


  • ¾ C olive oil


While blender is running drizzle olive oil thru to.


  • ¼ C. feta cheese


Pulse blender 3 to 4 times


Place spinach on wrap and drizzle with dressing. Add cucumber, tomato, peppers and onion.  Lightly drizzle with dressing.  Top with olives and feta.  Fold ends of wrap in and roll burrito style.  Cut in half and serve.
