Simple Mother's Day recipes

COLUMBUS, GA (WTVM) - If you want to serve mom breakfast in bed this weekend, but don't know what to make, we've got some great options for you.

Chef Jamie Keating, owner of Epic restaurant in Columbus, has brought us two simple recipes to serve mom for Mother's Day.

Recipe: Lemon Poppy Seed Biscuits

Ingredients

5 oz. unsalted butter, softened

1 cup caster sugar

1 egg

2 cups plain flour

1 teaspoon baking powder

1 tablespoon poppy seeds

1 tablespoon finely grated lemon rind

1 tablespoon lemon juice

Peaches

Whipped Cream, Mint and Confectioners' sugar to garnish

Directions

Step 1

Preheat oven to 180°C/160°C fan-forced. Line 3 baking trays with baking paper. Using an electric mixer, beat butter and sugar until pale and creamy. Add egg. Beat to combine.

Step 2

Sift flour and baking powder over butter mixture. Add poppy seeds, lemon rind and lemon juice. Stir to combine. Roll level tablespoons of mixture into balls. Place balls, 5cm apart, on prepared trays.

Step 3

Bake, one tray at a time, for 12 to 15 minutes or until light golden. Cool on trays for 5 minutes. Transfer to a wire rack to cool completely.

Recipe: Berry Smoothie

Ingredients

1/2 cup (120 ml) fruit juice(orange, apple, etc.)

1/2 cup (120 g) vanilla low-fat yogurt

1/2 cup (80 g) red grapes

1/2 cup (75 g) strawberries

1/2 cup (80 g) blueberries

1/2 cup (100 g) raspberries

Directions

Place all ingredients into the Vitamix Blender container in the order listed and secure lid.

Select Variable 1.

Turn machine on and slowly increase speed to Variable 10, then to High.

Blend for 1 minute or until desired consistency is reached, using the tamper to press the ingredients into the blades.

Present in glass of choice with festive straw. Top with fresh whipped cream and berries
